Everything that comes out of our kitchen has been kissed by real wood fire. Our custom WoodShow Grill sears hand-cut steaks, chops, and burgers over open flame, while our Oyler 700 rotisserie smoker turns out brisket, ribs, and pulled pork low and slow the way West Texas intended. This is food built for hungry people - no shortcuts, no gas grills, just smoke, flame, and time.

A Historic Saloon Reborn in the Heart of West Texas

Pumpjack Saloon sits at the corner of 2nd and Walnut in downtown Colorado City, Texas - inside a building that's been part of this town's story for over a century. Once home to the old Colorado Drug, these walls have seen cattle drives, oil booms, and one infamous unsolved murder. Now they're home to wood-fired steaks, slow-smoked barbecue, cold draft beer, and live music on two stages. We're veteran-owned, woman-owned, and proud to be part of what's happening in the Mother City of West Texas. Pull up a chair - this is the next chapter.
